One of my favorite breakfasts, Rava Idlis

Ingredients:
1 cup wheat sooji/rava (medium thick)
1/2 tea spn mustard seeds
1/2 tea spn grated and crushed ginger
2-3 finely chopped green chilies
1 tea spn chana daal
1/4 tea spn soda
3/4 cup grated carrot
1 tbl spn cashews(optional)
2-3 strands of coriander leaves
2 tbl spn grated coconut(fresh or frozen)
1 cup yogurt/curd
1-2 tbl spn oil
Salt

Method:
Roast sooji till a nice aroma comes out.
Heat oil and add mustard seeds. When they start popping, add ginger, green chilies, chana daal and fry for sometime. Switch off the heat and immediately add sooji, mix well.
Add salt, soda, carrot, coriander leaves, coconut, yogurt/curd and mix well. Leave it for around 30mins.
Grease an idli stand. Keep half cashew and then put the mixture on top (so that when the idlis are removed, the cashews can be seen on the top). Steam for around 12-15mins.
Serve hot.

Preparation time : 30mins (excluding standing time)

PS: If you do not want to add soda, still the idlis can be made soft. I got the following tips from Poornima.
- Add more oil. When the seasoning is mixed with rava/sooji, it should be almost the consistency of rava laddoo.
- Add more curd/yogurt. The batter consistency should be like normal idlis.

Ingredients:
1/2 cup over riped mashed bananas
2 tbl spn sugar
2 tbl spn yogurt
1/8 tea spn baking soda
1 and 1/2 cups to 2 cups wheat flour (traditionally maida is used)
1/2 tea spn cumin seeds (optional)
1/4 tea spn pepper powder (optional)
Oil
Salt

Increase sugar if you like them more sweet. With 2tbl spns they become mildly sweet.

Method:
Add sugar, salt, cumin seeds(optional), pepper(optional), soda and yogurt to mashed bananas. Mix well.
Add wheat flour and mix to make dough. The amount of flour specified is approximate, add enough to make a stiff dough.
Cover it and leave for about 2-3 hrs. (I refrigerated the dough overnight).
Heat oil. (I used 1/2 peanut oil and 1/2 olive oil).
Take small balls of dough and roll into small puris. Deep fry.
Serve hot.

Onion Dosa

Ingredients:
1 cup chana daal
1 cup toor daal
1 cup rice
1 cup onion(chopped)
1 cup grated coconut(fresh or frozen)
1/4 tea spn Tamarind extract (or extract thick juice of 3-4 pieces of tamarind)
3-4 red chilies
1/2 cup coriander leaves
Oil/ghee
Salt

Method:
Soak rice and daals in water for 4-5hrs(or overnight). Grind them into a smooth batter and leave it for around 1hr.
Grind red chilies, coconut, onion, coriander leaves to a paste. Add this paste and salt to the batter, mix well.
Heat tava and spread a dosa. Spread some ghee/oil on the dosa. Fry well from both sides.
Serve hot.

PS: This dosa can be eaten alone without any chutney. I served it with pickle to give some extra taste.

Preparation time : 20mins (excluding the 1hr standing time)

Ingredients:
Moong daal(hesru bele, mooga daali) 1 cup
Onion(chopped) 3/4th cup
Lemon juice 2 tbl spns
Curry leaves 1 strand
Green chillies 4-5
Mustard seeds 1 tea spn
Coriander leaves 3-4 strands
Oil 1 tea spn
Salt

Method:
Soak moong daal in water for 3hrs (I soaked it for just 1 hr or may be less than that). Grind with salt without adding water(if required, add very less water) it to a coarse paste.
Make small balls with hand, keep on idli stand or a normal vessel and cook on steam (the way idli is cooked).Powder the cooked balls with hand to remove big lumps. (Ignore the bad smell of cooked moong daal at this stage!!!).
Heat oil and add mustard. When it starts spluttering, add curry leaves, green chillies. Fry for some more time. Now add onion and fry till they turn slightly brownish. Add moong daal powder prepared already and a little salt ( Salt is already added while grinding, so add only a little at this stage). Add coriander leaves and Lemon juice.
Serve hot.
